Sure! Here's a delicious recipe for Degi biryani;

Ingredients:

  • 2 cups Basmati rice
  • 500 grams bone-in chicken, cut into pieces
  • 2 onions, thinly sliced
  • 2 tomatoes, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup plain yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 2 green chilies, slit
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon biryani masala powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon cumin seeds
  • 4 cloves
  • 2 cardamom pods
  • 1-inch cinnamon stick
  • 4 tablespoons ghee or cooking oil
  • Salt to taste
  • Saffron strands (optional)
  • 1/4 cup warm milk (optional)

Instructions:

  1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
  2. Heat ghee or oil in a large, heavy-bottomed pot over medium heat. Add the cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
  3. Add the sliced onions and cook until they turn golden brown. Remove half of the fried onions and set them aside for garnishing.
  4. To the remaining onions in the pot, add the ginger-garlic paste and cook for a minute until the raw smell disappears.
  5. Add the chicken pieces and cook until they are lightly browned on all sides.
  6. Now, add the chopped tomatoes, green chilies, red chili powder, turmeric powder, and salt. Cook for a few minutes until the tomatoes soften.
  7. Add the yogurt, biryani masala powder, and half of the chopped mint and coriander leaves. Mix well and cook for another 5 minutes.
  8. Meanwhile, bring a large pot of water to a boil. Add salt to taste. Drain the soaked rice and add it to the boiling water. Cook the rice until it is about 70-80% cooked. It should still have a slight bite to it. Drain the rice and set aside.
  9. Preheat the oven to 350°F (180°C).
  10. In a separate small bowl, dissolve saffron strands (if using) in warm milk. Set aside.
  11. Now, layer the partially cooked rice over the chicken masala in the pot. Sprinkle the remaining mint and coriander leaves on top.
  12. Drizzle the saffron-infused milk over the rice. This will give the biryani a beautiful yellow color and aroma. You can also sprinkle a few fried onions on top.
  13. Cover the pot with a tight-fitting lid and place it in the preheated oven. Bake for 30-35 minutes until the flavors meld together and the rice is fully cooked.
  14. Remove the pot from the oven and let it rest for a few minutes. Gently fluff the rice with a fork to mix the layers.
  15. Garnish with the reserved fried onions. Your delicious Degi Biryani is ready to be served!
