Ingredients:
- 2 cups Basmati rice
- 500 grams bone-in chicken, cut into pieces
- 2 onions, thinly sliced
- 2 tomatoes, finely chopped
- 2 tablespoons ginger-garlic paste
- 1/2 cup plain yogurt
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 2 green chilies, slit
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon biryani masala powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon cumin seeds
- 4 cloves
- 2 cardamom pods
- 1-inch cinnamon stick
- 4 tablespoons ghee or cooking oil
- Salt to taste
- Saffron strands (optional)
- 1/4 cup warm milk (optional)
Instructions:
- Wash the basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
- Heat ghee or oil in a large, heavy-bottomed pot over medium heat. Add the cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
- Add the sliced onions and cook until they turn golden brown. Remove half of the fried onions and set them aside for garnishing.
- To the remaining onions in the pot, add the ginger-garlic paste and cook for a minute until the raw smell disappears.
- Add the chicken pieces and cook until they are lightly browned on all sides.
- Now, add the chopped tomatoes, green chilies, red chili powder, turmeric powder, and salt. Cook for a few minutes until the tomatoes soften.
- Add the yogurt, biryani masala powder, and half of the chopped mint and coriander leaves. Mix well and cook for another 5 minutes.
- Meanwhile, bring a large pot of water to a boil. Add salt to taste. Drain the soaked rice and add it to the boiling water. Cook the rice until it is about 70-80% cooked. It should still have a slight bite to it. Drain the rice and set aside.
- Preheat the oven to 350°F (180°C).
- In a separate small bowl, dissolve saffron strands (if using) in warm milk. Set aside.
- Now, layer the partially cooked rice over the chicken masala in the pot. Sprinkle the remaining mint and coriander leaves on top.
- Drizzle the saffron-infused milk over the rice. This will give the biryani a beautiful yellow color and aroma. You can also sprinkle a few fried onions on top.
- Cover the pot with a tight-fitting lid and place it in the preheated oven. Bake for 30-35 minutes until the flavors meld together and the rice is fully cooked.
- Remove the pot from the oven and let it rest for a few minutes. Gently fluff the rice with a fork to mix the layers.
